General Manager and Executive Head Chef of the Norway Seafood Restaurant, Terje Hamnes, explains the concept of the restaurant:
What we are doing in our restaurant is keeping the focus on the raw materials, our Norwegian fish – mostly salmon, codfish, halibut and King Crab. We try to preserve the natural flavors of the fish.
The dishes on our menus are strictly Norwegian, or European. However, we try to present the food in a setting that is more familiar to Chinese visitors than the usual western kitchen. On our menus, we have the options of “tasting menus”, where you can sample lots of different preparations of fish, both hot and cold, with the opportunity to share around the table.
The restaurant stands out from many other restaurants in the Expo, in the fact that it is very integrated in the pavilion. While enjoying a meal in the restaurant, you get a great sense of the atmosphere in the pavilion – the night mode is especially recommended, with great lighting and music.
You will also get easy access to the pavilion after a meal there.
Recommended dishes:
- Salmon composition: Salmon in 3 varieties, with lemon oil, roasted almonds and potato salad
- Roasted fillet of salmon, served with grilled zucchini, potato puree and sauce vierge
- Pan-fried fillet of codfish, with braised mushroom, spinach puree, roasted potatoes and Beurre Noisette
- And of course our signature dish, a Tasting Menu, where you’ll be treated to 10-15 different varieties of Norwegian Seafood.
